
One of my go to weeknight dinners is Italian Sausage with mixed sweet peppers and onions. It's takes little preparation and since my husband seeks low carb options easily fits the bill. One of our favorite sausage choices is from a local company Mineo & Sapio. They have many variations to choose from, our favorite the hot Italian with parmesan cheese. You can do this recipe with whatever type of fresh sausage you enjoy.
So let's get started!
Fresh Italian sausage, onions, peppers, and some side dishes. Tonight I am doing oven baked sweet potatoes and a wedge salad with blue cheese, red onion, bacon, and grape tomatoes. The hardest part about this meal is pealing and cutting the sweet potatoes. If your strapped for time you could always pick up a package of prepared in the freezer section of your local market.
Go ahead and collect all of our ingredients. You will need roughly 8 links of sausage or approximately 2 lbs. Three nice size sweet peppers, 1 large onion, 2-3 sweet potatoes. For our wedge salad you will need 1 head of iceberg lettuce, 1/2 of a red onion, 1/2 cup of grape tomatoes, 4 slices of bacon, and 1/2 of crumbly blue cheese dressing.
To prepare the sausage preheat your oven to 350 degrees, place the sausage in a 9 inch baking pan. While the oven is preheating slice your peppers and onions and place those in a 8x8 inch baking dish. Or if you prefer you could place the sausage and peppers in a 9x13 inch pan and cut down on your clean up. Either way it will be delicious. Of note is you cook your peppers separately drizzle with some olive oil and season with salt and pepper. Cooking time is roughly 1 hour 15 minutes.
Next you need to peel and slice your sweet potatoes. I like to cut them in half long ways and then slice in the same directions. This helps with getting a nice uniform thickness. Place the slices in a single layer on a cookie sheet. Salt and pepper to taste. These will take about 20-30 minutes in a 375 degree oven.
You can add this to the bottom shelf of your oven about 30 or so minutes into the cooking time of your sausage.

While this is cooking start your wedge salad. Put your 4 bacon slices in the microwave for about 5 minutes. Of course this depends on the strength of your microwave. While the bacon is cooking chop your onions and tomato. Once the bacon is cooked let it cool for a few minutes and then chop into small pieces. Cut your head of lettuce into 4 equal wedges. Plate and garnish with your toppings. Don't add your salad dressing until you are ready to serve. Our choice is Ken's Blue Cheese but choose whatever your favorite might be.
Once you have completed the salads your sausage and potato's are likely ready to come out of the oven.

Let's talk about some quick things that can make getting dinner on the table tonight a little easier and still be just as delicious.
Prep the night before all items that require chopping. Place in sealed containers and your ready to go.
Need even easier options buy the sweet potato's in the freezer section of your local market.
Instead of using fresh bacon opt for bacon bits, not quite as good but will get the job done.
