Chicken stroganoff is a great weeknight meal for your family and elegant enough for casual entertaining with friends. This can easily be prepared in just under an hour. The clean up is a breeze as well since we are only going to be using one pan to make this simple delicious dish.
Ingredients:
Mushrooms - 16 oz.
Heavy cream - 1/2 cup
Chicken stock - 3 cups
Red wine - 1/3 cup
Sour cream - 3 TBSP
Preparation:
Slice your chicken breast lengthwise about 1/2 in thick. If you want to save time you could buy the boneless skinless tenders. Dredge each breast in flour.
Slice your mushrooms, onions and chop your parsley finely.
In a frying pan coat with olive oil and sear your chicken. About 10 minutes until it just has a bit of color. Do not cook it all the way. Remove the chicken from the pan and set aside. You will likely have to do this in batches as you want the chicken in a single layer.
Once the chicken is removed add your mushrooms and onions to the same pan with the wine. Cook until slightly tender on medium heat and then remove from pan.
In the same pan add your butter with flour to create a roux. Then add your chicken stock, heavy cream, paprika, and parsley. Cook for several minutes until your sauce comes together and thickens.
Now it's time to put the chicken and mushrooms back in the pan and simmer on low for 20 minutes. When you room the dish from the heat and your sour cream and parsley.
Serve this over buttered noodles or rice.
This should easily serve 6-8 people.
