Pork Chop Cacciatore

 A really simple weeknight dish is pork chop cacciatore. You can do this dish in the slow cooker or low and slow in the oven. Either way it makes for a simple and delicious one pot dinner.

Ingredients

Bone-in pork chops - 6
Onion - 1 small
Mushrooms - 8 oz.
Pepper - 1 large sweet
Tomato - 1 can petite diced
Parsley - 1tsp
Italian spices - 2 tsp
Salt 
Pepper

Preparation

Chop your onions, pepper and slice slice your mushrooms.

In a 9 x 13 baking dish or slow cooker arrange your pork chops on the bottom. Top with your mushrooms, onion, pepper, and tomato. I add the tomato last so all the juice drains down. Add your spices and that's it.



 If your preparing this in the oven, cover with foil and cook at 300 degrees for approximately 2.5 hours.

In the slow cooker place on low and cook for 6 - 8 hours. It's perfect to prepare before heading to work. 

Serves 4 - 6 depending on the size of your chops and your appetite of course.

Place your cacciatore over some boiled noodles or rice and there you have it.

You can also easily do this dish with chicken. Boneless skinless breast make a delicious cacciatore.
