Porterhouse Steaks on the Grill

Tender full of flavor steaks on the grill. Well it's that time of year to get outside and enjoy the weather. What better way to do so than a great meal enjoyed with family and friends. 

For this weeks Sunday dinner we are having porterhouse steaks on the grill, seasoned to perfection and topped with a blue cheese crust. For sides we did oven roasted asparagus, twice baked potatoes, and a mushroom bourbon cream sauce. 

Ingredients

Steaks and seasoning. 

Preparation:

Take your steaks out of the fridge about 1-2 hours before cooking. Cold steak does not cook evenly.

For our seasoning today we are going to use some fresh garlic and chives finely chopped, along with cumin, oregano, garlic powder, onion powder, pepper, and sea salt. Combine all the ingredients in a bowl and evenly coat both side of your steaks. 

In a separate bowl mix 1/2 cup of crumbled blue cheese, 1/2 cup of panko bread crumbs, 1/2 stick of melted butter, 1 teaspoon of fresh squeezed juice lemon, some fresh parsley and chives chopped fine.

You should season the steaks with the dry mix when you take them out of the fridge so the meat has time to absorb the flavor. Let the steaks rest with the seasoning on for at least an hour. 


Now for the grilling. How you would like the doneness of your steak and their thickness will determine cooking time. Using a meat thermometer is the best way to ensure they are cooked to your liking.

Just before your steaks are cooked spoon the the blue cheese mixture evenly on the top each steak. 

A quick cooking reference:

Rare: 125 degrees - red

Medium Rare: 130 to 135 degrees - pink

Medium: 135 to 145 degrees - slightly pink

Medium Well: 145 - 150 degrees - mostly brown

Well-Done: 155 degrees or higher  - all brown

Let your steaks rest for at least 5 minutes after cooking. Also keep in mind that the meat continues to cook while resting so take that into account when measuring the temperature. You will likely want to stay on the lower end of the above temperature guide to achieve your desired result.

So that's it easy simple and delicious. 

Pair with your sides and nice bottle of your favorite red wine.
