Red potatoes - 5 lbs.
Green onions - 3
Bacon bits - 1 package
Shredded cheddar - 8 oz.
Mayonnaise - 1cup
Sour cream - 1 cup
Ranch dry seasoning - 1 package
Wash your potatoes. Cut them into quarters. In a large pot, place your potatoes, fill the pot with water to cover them. Bring to a boil and cook till fork tender. When cooked drain into a colander. Rinse with cold water to stop the cooking process.
While your cooking the potatoes cut your green onion into small pieces.
In a large bowl add your mayonnaise, sour cream, green onions, and ranch seasoning. Mix well. Add your potatoes to the bowl and combine the mayo mix. Once you have all the potatoes well coated stir in the cheese and bacon bits.
Chill and serve. You will be surprised at the light refreshing flavor of this salad.
This can store easily in the fridge for 3-4 days. If you don't have red potatoes no worries any potato will work. Add celery for extra crunch or some jalapenos for a little spice.
