A favorite at our house is a wedge salad with crumbly blue cheese and bacon. It's great for a weeknight side dish or served alone for a delicious lunch.
Let's start our wedge salad. You'll need a head of iceberg lettuce, one medium tomato, 1/2 cup of chopped red onion, 4 slices of bacon, 3/4 cup crumbly blue cheese, and blue cheese dressing. One head is ample to serve 4 people.Put your 4 bacon slices in the microwave for about 5 minutes. Of course this depends on the strength of your microwave.
While the bacon is cooking chop your onions and tomato.
Once the bacon is cooked let it cool for a few minutes and then chop into small pieces.
Cut your head of lettuce into 4 equal wedges. Plate your lettuce and garnish each wedge with your onion, tomato, and bacon.
I like to place the garnished wedges in the fridge for about 30 minutes, so they are cold and crisp when served.
Don't add your salad dressing until you are ready to serve and top with your crumbly blue cheese. Our choice is Ken's Blue Cheese but choose whatever your favorite might be.
