Greens and Beans

Greens and Beans are a delicious side dish, appetizer, or meal all by itself. The hardest thing about this dish is chopping your greens, onions, and garlic. 

Ingredients
6 cups of Fresh Greens - your choice today I used swishchard but you can use escarole, collard, or a combination. It's whatever you prefer.
1 can cannelloni beans
3 - 5 cloves of garlic
1 medium onion
3 cups of Chicken broth - if you like it more like a soup add an additional cup
Olive oil
Salt & Pepper
Red Pepper to taste
1 TBSP Fresh Parsley Chopped
1 TBSP Fresh Basil Chopped

Preparation
Wash your greens well. Chop your onion, garlic, and greens. 

In a saucepan saute you onion and garlic in olive oil until they are just a bit translucent. Then add your beans to the mix and saute about 3-5 minutes on medium. Do not drain the beans. Add your fresh parsley and basil. Some might disagree with adding at this point but this is my technique.

In a separate pan bring a pot of water to boil. Once boiling add your greens and cook for about 2 minutes. 

With a slotted spoon remove greens from the pan so that you are retaining some of the liquid. Add the greens directly to your other pot. 

Add your chicken broth and simmer on low for about 1 hour to bring all of your flavors together.

Serve with some crusty bread or a nice polenta.
