Pulled pork made in the crockpot makes a delicious meal for a weeknight dinner or your next gathering. The pork loin comes out supper tender and is a much leaner choice than a shoulder or pork butt. If you prefer a to use shoulder or butt the recipe still works well.
Ingredients
Pork loin - 6 lbs
Orange juice - 1 cup
Dry rub
Oregano - 1 TBSP
Paprika - 1 TBSP
Garlic powder - 1 TBSP
Onion powder - 1 TBSP
Salt - 1 TBSP
Black pepper - 1 TBSP
Orange juice - 1 cup
Dry rub
Oregano - 1 TBSP
Paprika - 1 TBSP
Garlic powder - 1 TBSP
Onion powder - 1 TBSP
Salt - 1 TBSP
Black pepper - 1 TBSP
BBQ sauce - 1 bottle
Preparation
Rinse your pork loin then pat dry. Mix all of your dry ingredients together in a bowl. Once the spices are well mixed coat your loin on all sides and rub into the meat.
Place the loin in your crockpot. I generally place mine in whole. Add the orange juice. You want the liquid to be at least half the level of the meat. Cover and cook on low for 8-9 hours.
When you have completed cooking pull the meat out. Place on a cookie sheet and shred with 2 forks. Drain the liquid into a separate pot or bowl. Once the meat has been shredded return it to the crock pot. Add some of the liquid back into the pot. Add 1/2 bottle of BBQ sauce. You want the mixture to be juicy and moist. If you like more bbq sauce go ahead and adjust to your liking.
Serve with nice hard rolls. I leave the remainder of bbq sauce for guests to add to their liking.
This recipe easily serves 12.
If you like a little spice add some crushed red pepper or cayenne to your dry rub.
I like to serve with sides of baked beans, corn bread, coleslaw, mac and cheese, potato salad. Some or all you decide.
Enjoy!!
